Chicken and Brie Grilled Quesadillas with Cherry Salsa

Serves 4

Ingredients :

    8 flour tortillas 400g cooked and sliced chicken 1 whole brie cheese about 6" sliced in 4 along the length 1 packet of clean rocket (2 cups) 125ml of cherry sauce 125ml of fresh pitted and diced cherries 60ml of red onions in thin dices 30ml of olive oil Salt and pepper

Directions :

  1. Assemble quesadillas (grilling sandwiches) with brie, chicken and arugula and season with salt and pepper
  2. Start the grill over high heat. Mix sauce, cherries and onions, then add seasonings.
  3. Grill quesadillas on both sides, serve sharpened with cherry salsa
Pro Tip:

Thoroughly clean the grill before grilling the quesadilla, to have well-glided and clean marks.
